Leftover remix: Blueberry Chicken Salad

 I absolutely LOVE a good prep meal that can be remixed! Here I made a SUPER simple Chicken salad from the breast of rotissorie chicken that we ate for dinner a few nights ago! And depending on whether I choose it for a snack or meal here are two ways that I would eat it! Above: Paired with crackers, eaten by itself or placed on flatbread!

 Above: over 1/4 cup of pasta. Seasoned with a dash of sea salt and 1 cap of vinegar and chilled.

 You'll need:

-chicken(prepared however you like it) I used the remainder of the breast meat I had which came to about 2 generous cups. 

-handful of fresh bluberries

-1/2 cup diced onions and green pepper

-1/2 fresh squeezed lime

-dash of pepper

-2 Tbl sp of light mayo or miracle whip (I chose Hellmann's below)


Super simple mix, refrigerate and enjoy!
